Taro Gebäck/ Taro puff pastry/芋头 酥








Was Taro ist habe ich bereits einmal ausführlich geschrieben. Heute stelle ich Euch ein anderes Gebäck mit Taro vor. Eigentlich ist es schon lange her wo ich es gebacken habe. Aber mir fiel partout nicht ein wie ich es ins Deutsche übersetzen soll... Im Englischen heißt es puff pastry, also Blätterteig - was nicht richtig zutrifft. Es hat in der Tat die Konsistenz von Blätterteig, aber wird ohne Butter zubereitet. Also nenne ich es einfach Gebäck.

Once I described what Taro is. Today I introduce you another pastry with taro. Actually I baked it a long time ago, but I hesitate to post it because I can't translate the name properly in german. In english it is called "puff pastry", but this is not the exact description. The texture is indeed like puff pastry, but it is baked without butter. So I simply call it pastry.

Zutaten:

Für den Wasserteig:

400g Mehl
70g Zucker
80g Palmin Soft
ca. 180g Wasser
ein paar Tropfen lila Lebensmittelfarbe

Für den Ölteig:

250g Mehl
130g Palmin Soft


Für die Füllung:

300g gekochten, gepellten und heißen Taro
150g Puderzucker
100 g koh fun ( 糕 粉)
100g Margarine



Ingredients:

For the water dough:

400g flour
70g sugar
80g shortening
ca. 180g water
a few drops of purple food colour


For the oil dough:

250g flour
130g shortening


For the filling:

300g cooked, peeled and hot taro
150g powder sugar
100g koh fun (糕 粉)
100g Margarine

Zubereitung/ Methode:
  • Heißen Taro zu Brei stampfen und mit den anderen Zutaten für die Füllung in einer Schüssel vermischen.
  • Mash hot taro and mix it with other Ingredients for filling in a bowl.




  • Mische alle Zutaten für den Wasserteig zusammen. Kühl stellen. Vermenge alle Zutaten für den Ölteig und auch kühl stellen. Wasserteig zu je 70g und Ölteig zu je 30g portionieren
  • Mix all ingredients for water dough. Chill. Mix all ingredients for oil dough and chill it, too. Portion water dough to 70g each and oil dough to 30g each.


  • Rolle eine Portion Wasserteig aus, platziere eine Portion Ölteig auf den Wasserteig. Wickel den Wasserteig um den Ölteig.
  • Roll a portion of water dough out, place a portion of oil dough on the water dough. Wrap water dough aroung oil dough.


  • Rolle den Teig länglich aus.
  • Flatten dough longishly.



  • Wickel den Teig zu einer Rolle.
  • Rolll dough to a swiss roll.




  • Drehe die Rolle um 90° und erneut ausrollen. Nun das Ganze nochmal zusammenrollen.
  • Turn roll 90° and flatten again. Now roll the second time to a swiss roll.



  • Schneide den Teig in 2 Hälften.
  • Cut dough in 2 halves.


  • Den Teig flach ausrollen.
  • Flatten dough.


  • Setze etwas Füllung in die Mitte des Teiges. Wickel den Teig um die Füllung. Die "Naht" vom Teig bitte nach unten platzieren.
  • Place some filling in the middle of the dough. Wrap dough around filling. Please set the "seam" on the bottom.


Zentriert

  • Im vorgeheiztem Backofen (170°C Ober-/Unterhitze ) ca. 30 Minuten backen.
  • Bake in a preheated stove ( 170°C top/-lowheat ) about 30 minutes.
