Taro fatt koh


Was ist Taro? Hier im europäischem Raum ist dieses Gemüse kaum bekannt. Asien sind Taros so gebräuchlich wie Kartoffeln. Taro ist ein Knollengemüse und auch unter dem Namen "Eddo" oder "cocoyam" bekannt. Wir Kantonesen nennen ihn "Wu Tau". Taro ist auf vielfältige Weise verwendbar: Man kann sie wie Kartoffeln kochen, pürieren, frittieren, als Süßspeise usw. Sogar Eiscreme mit Tarogeschmack gibt es. Speisen, vor allem Süßspeisen und Gebäck mit Taro haben eine aparte violette Farbe.
Ich habe mich an einem Kuchen versucht, wo Taro gekocht und püriert wird und dann als Kuchen gedämpft wird. Leider ist die typische violette Farbe nicht so durchgekommen, aber ich habe auch keine zusätzlichen Farbstoff hinzugefügt.


What is Taro? In Europe this root vegetable isn´t very popular, but in asia it is as common as potatoes. Taro is a root vegetable and is also called "eddo" or " cocoyam". We Cantonese call Taro " Wu Tau". taro is used in many ways: some cook them like potatoes, puree, deep-fry or for making sweet food. Even ice cream can be made with taro. Food which are made with taro has a beautiful light lilac colour.
I´ve tried to make a cake where taro is cooked and mashed and later steamed. Unfortunately the lilac colour doesn´t come through. Maybe it is because I didn´t add any extra artifical colour.



Zutaten:

Für Starter Teig:

60g Mehl
1 TL Trockenhefe
50 ml Wasser

Zutaten A:

200g geschälte Taro

Zutaten B:

1 EL Backpulver
140g Zucker
150 ml Konzentrierte Kokosmilch
75 ml Wasser

Zutaten C:

150 g Mehl

Zubereitung:

  1. Für den Starterteig mische alle Zutaten und 1-2 Stunden beiseite stellen.
  2. Schneide Taro in Stücke und dämpfe im Wasserbad bis er weich ist. Zerstampfe Taro solange es heiß ist.
  3. Vermische Taro mit Zutaten B in den Starterteig .
  4. Füge Zutaten C zu 3. und vermische es gleichmäßig. Fülle mit Papierförmchen bedeckte Backformen zu 3/4 mit dem Teig.
  5. Im Dämpfer ca. 20-25 Minuten dämpfen und mit einem Zahnstocher überprüfen, ob fatt koh gar sind.







For starter dough:

60 g flour
1 tsp. instant yeast granules
50 ml water

Ingredients A:

200 g peeled taro


Ingredients B:


1 tsp. baking powder
140g sugar
150 ml conzentrated Coconutmilk
75 ml water

Ingredient C:

150 g flour



Methode:

  1. For starter dough mix all ingredients together and keep aside for 1-2 hours
  2. Cut Taro into pieces, steam till cooked. Mash while still hot.
  3. Combine taro and ingredients B into the starter mixture.
  4. Add ingredients C to 3. and stir well. Fit paper cups into moulds. Fill cups with dough 3/4 full.
  5. Arrange on a steamer and steam for 20-25 minutes. Check with toothpicks before removing fatt koh.
