Nuss-Karamelltorte/ Nut-Carameltorte

Mein Mann, der mein größter Kritiker in Sachen Backen ist, hatte für diese Torte nur einen Wort übrig: WOW! Damit hat er wirklich die Sache auf dem Punkt gebracht! Die Zutaten sind raffiniert kombiniert und die Torte ist relativ einfach gemacht. Optisch und geschmacklich ein Hochgenuß. Dieses Rezept habe ich hier gefunden, habe aber wegen den Kindern den Rum weggelassen. Die Sternfrucht konnte ich in der Eile nicht auftreiben und die Karamellfäden habe ich nicht hinbekommen. da muß ich noch etwas üben.

The ingredients are clever combined and the cake is pretty simple to make. It is optical and flavour a great pleasure. I´ve found this recipe here, but I´ve omitted the rum because of the kids. I haven´t carambola and the caramel filaments doesn´t work. I think I have to exercise a little bit more.





Zutaten für 26 cm Springform:

100g Macademian Nüsse
100g Walnüsse
125 g weiche Butter
285 g Zucker
3 Eier
125 g Mehl
1,5 TL Backpulver
5 Blatt weiße Gelatine
300g Mascarpone
150 ml Orangensaft
200 ml Sahne
1 Packung Vanillin Zucker
100g Pistazienkerne
100g Mandelkerne
1 EL Fett
2 El gemahlene Mandeln

Zubereitung:

1. Je 50 g Macadamia- und Walnüsse fein mahlen. Butter mit 125 g Zucker cremig rühren. Eier einzeln zufügen. Mehl, Backpulver und gemahlene Nüsse mischen und unterrühren. Den Teig in eine gefettete, mit gemahlenen Mandeln ausgestreute Springform (26 cm Ø) füllen und glatt streichen. Im vorgeheizten Backofen bei 175 Grad 20 bis 25 Minuten backen. Herausnehmen, etwas abkühlen lassen, aus der Form lösen und vollständig erkalten lassen.

2. Für die Creme Gelatine in Wasser einweichen. Mascarpone mit Orangensaft und 100 g Zucker verrühren. Sahne mit Vanillinzucker steif schlagen. Tropfnasse Gelatine bei geringer Hitze auflösen und mit 3 EL Mascarpone-Creme mischen. In die restliche Creme rühren und die Sahne unterheben. Boden mit einem Springformrand umschließen, die Creme daraufstreichen und ca. 1 Stunde in den Kühlschrank stellen.

3. Restliche Nüsse, 50 g Pistazien und Mandeln grob hacken. Restlichen Zucker in einer Pfanne goldbraun schmelzen und mithilfe von 2 Gabeln einige lange Fäden ziehen. Zum Abkühlen auf Alufolie setzen. Vorbereitete Nüsse in das restliche Karamell geben und sofort auf Back-Alufolie verteilen, abkühlen lassen. Torte aus dem Rand lösen. Übrige Pistazien fein mahlen und an den Tortenrand streuen. Nusskaramell in kleinere Stücke brechen und auf der Torte verteilen.

Tipp: Den Karamell habe ich nach Anweisung vorbereitet (Ausnahme: Ich habe keine Alufolie benutzt sondern eine gehärtete Glasplatte) und das Ganze klebte so stark, daß ich Hammer und Meißel benutzen mußte, um es von einer gehärteten Glasplatte zu entfernen. Meine Schwiegermutter hat mir quasi beim Vorbeigehen gesagt, daß es besser klappen würde, wenn man die Arbeitsfläche vorher mit Öl abpinseln soll. Sie hätte ein Stunde vorher vorbeigehen sollen, dann hätte ich nicht so viel Mühe gehabt!!


Ingredients for 26 cm springform:

100g macadamian nuts
100g walnuts
125g soft butter
285g sugar
3 eggs
125 g flour
1,5 tsp. baking powder
5 sheets white gelatine
300g mascarpone
150 ml orange juice
200 ml cream
1 package vanilla sugar
100g pistachios
100g almonds
2 tblsp. grinded almonds

Methode:
  1. Grind 50g macadamia nuts and 50g walnuts. Cream butter with 125 g sugar. Add eggs one by one. Mix flour, baking powder and grinded nuts und fold in the eggcream. Grease 26 cm springform and spread it with grinded almonds. Put dough into the springform and flatten it. Bake in a preheated oven ( 175 °C) for 20-25 minutes. Let cake cool off and release it from the springform.
  2. For the cream soak gelatine in water. Stir mascarpone with orange juice and 100g sugar. Beat cream with vanilla sugar until stiff. Dissolve gelatine under low heat and mix it with 3 tablespoon mascarpone cream. Then put it to the rest of the cream and fold in whipped cream. Put springform around the cake and coat cream on the cake. Place cake in a refrigerator for at least 1 hour.
  3. Chop the rest of the nuts, 50g pistachios and almonds. Melt sugar in a pan until goldbrown. Use 2 forks to draw some filaments and put them on a pieco of aluminium foil. Add chopped nuts into caramel and disperse it on a aluminium foil. Let it cool off. Separate cake from the edge. Grind rest of pistachios and spread it over the cake edge. Break nutcaramel in little pieces and disperse it on the cake. Decorate with caramel filaments.
Tipp: I have prepared caramel according to the description ( exception: I put it on a hardened glas plate instead of aluminium foil). It was so sticky that I have to use hammer and bit to remove caramel from the glas plate. Passing by my caramel desaster my mother-in-law barely told me that I have to brush the place with oil before you put caramel on.That day I´d wished my mother-in-law had passed 1 hour before!!

Da kann ich mich nur anschließen: Wow! Die sieht schon so wunderbar knackig-cremig-lecker aus! :-)

Schöne Torte! Und tolle Fotos.

Ich gebe karamellisierte Nüsse oft auch einfach auf einen Teller - was kleben bleibt, lässt sich mit heißem Wasser lösen. Die Einöl-Variante funktioniert natürlich noch besser.
